Cheddar Broccoli Soup 1/2 c. chopped onion 1/2 c. chopped carrot 1/3 c. sliced celery 3 Tbs. margarine 1/4 c. flour 1/2 tsp. dry mustard 1/2 tsp salt 1/4 tsp. pepper 1 14 oz. can chicken broth 1 1/2 c. milk 1 10 oz. package frozen chopped broccoli, thawed and drained 2 c. shredded cheddar cheese In a large pan cook onion, carrot, and celery in margarine about 5 minutes or till crisp-tender. Stir in flour, mustard, salt, and pepper. Add chicken broth and milk all at once. Cook and stir over medium heat till thick and bubbly. Cook and stir one more minute. Stir in broccoli and shredded cheese. Cook and stir over low heat till cheese melts and soup is heated through.
