Cathy Anstrom

Cathy Anstrom joined the faculty of Olivet Nazarene University in the fall of 1995 as an adjunct instructor. In 1999, Cathy accepted the position of Director of the Dietetic Program.

She received her Bachelor of Sciences in 1978 from Eastern Illinois University, and M.B.A. at Olivet Nazarene University in 1995. She earned a second masters degree in clinical dietetics from Finch University and Chicago Medical School. She has Certification as a Registered and Licensed Dietitian (RD/LD) and a Food Safety Instructor for the State of Illinois.

Cathy is the faculty sponsor for Kappa Omicron Nu the honorary society for Family and Consumer Sciences and the ONU Dietetics Club.
